Chili Prawn Linguini

Ingredients:
500g linguine pasta (or spaghetti)
½ cup (125ml) olive oil
400g royal red prawns
3 small fresh red chilies, seeded, chopped finely
2 cloves garlic, crushed
½ cup coarsely chopped flat-leaf parsley
2 teaspoons finely grated lemon rind

Preparation:
1. Cook linguine in a large pan of boiling salted water, uncovered, until just tender; drain.
2. Meanwhile, heat the oil in a large frying pan, add the prawns, chili and garlic and cook, stirring, until the prawns are just cooked through.
3. Remove from the heat and stir in the parsley and lemon rind.
4. Combine the linguine with the prawn mixture and toss gently. Serve with a green salad, if desired.

Macaroni Schotel

Ingredients
500 g Macaroni pasta
Onion
Garlic
Ham, diced
Mozzarella cheese, grated
2 Eggs
1 1/2 cup of milk
Salt
Pepper
Nutmeg

Preparation:
1. Boil a saucepan of water with 2 tablespoons vegetable oil and a little salt
2. Drop in the macaroni and boil until cooked. Drain and rinse
3. Cut the onion and crush the garlic
4. In a bowl mix the milk with the salt, pepper and nutmeg
5. Beat in the eggs and mix with the cheese, ham, onion and garlic
6. Add the macaroni and mix well
7. Pour into a greased oven proof dish and sprinkle extra cheese on the top
8. Bake in a moderate 180 ° Celsius oven until cooked and golden brown on top
Note:
You can substitute the ham with any meat you like eg. corned beef, tuna, chopped pastrami or a mixture of variety of different meats

Lasagna

Ingredients

Minced beef
Lasagna pasta sheets
Onion
Garlic
Capsicum
Salt
Pepper
Tomato paste
Cheese sauce
Milk
Corn flour
Grated Mozzarella cheese
Salt
Pepper
Nutmeg

Preparation:

1. Chop and dice the onion and garlic
2. Fry in a little olive oil until golden

3. Add the minced beef and mix until the mince is all broken up and cooked.
4. Add the tomato paste, chopped capsicum, salt and pepper
5. Cook until the meat is done
6. Prepare the cheese sauce.
7. In a saucepan add all the ingredients for the cheese sauce.
8. Bring to a boil while stirring constantly.
9. When the sauce is thick take of the heat.
10. In a greased baking dish layer 1/2 of the  minced meat on the bottom of the baking dish, add a layer of pasta sheet , then a layer of the cheese sauce.
11. Repeat finishing with the cheese sauce last.
12. Sprinkle a little of the grated cheese over the top
13. Bake in a moderate oven 180 °Celsius until cooked and golden brown on the top.
Note: Serve with tossed salad
