Wooohooo cocktail time

600 gram chopped pineapple
1/2 cup of caster sugar
4 kaffir lime leaves, remove the middle stalk
500 ml santan (coconut milk)
140 ml vodka
Juice of one lime
Ice

Directions:
1. Blend pineapple and sugar in the blender till smooth. Add the kaffir lime leaves, coconut milk and vodka and blend till smooth
2. Blend with ice serve immediately in tall glass

Daun Jeruk Purut – Kaffir Lime Leaves

Common Name: Kaffir Lime Leaves
Botanical Name: Citrus hystrix
Indonesian: Jeruk Purut
Thai: Makrut
Malaysian: Limau perut

- Used in all sorts of Indonesian dishes. If you are planning to plant one, choose the variety where the young leaves are of a blood red colour. This is the variety used in Indonesian cooking. There is also a variety where the young leaves are yellow green, but the flavour of this variety is distinctly different. The leaves can be stored in the freezer.
